Herbsaint Staffers to Offer Haggis Lagniappe at Second Sparklehorse

On Sunday (1.25), Herbsaint Executive Sous Chef Marcus Jacobs is going to cook up something he calls “North Sea Boudin.” In Scotland, the dish is known as haggis. The dish will be some NoDef sponsored Robbie Burns Day lagniappe during the second appearance of the Sparklehorse Grill (Jacobs’ collaboration with fellow Herbsaint staffer Caitlin Carney) at Kajun's Pub (2256 St. Claude Avenue).


At 4:30p.m., the haggis will be led in by a piper. After the Burns’ classic, “Address to the Haggis” is read, the sausage on steroids will be sliced open and served free to all. 


Of course, Sparklehorse’s normal fare will be served throughout as well. Jacobs describes their eclectic entrees. “Basically, our food fuses Southeast Asian flavors with Southern cooking style. Of course, we’re utilizing fresh, local products. The result is big, sweet, funky tastes with really good ingredients.”


Robbie Burns is regarded a Scotland’s national poet. His aliases include  “Rabbie Burns,” “Scotland's Favourite Son,” the “Ploughman Poet,” “Robden of Solway Firth,” the “Bard of Ayrshire” and sometimes simply “The Bard”. Annually, the Scots gather to mark his birthday on the 25th. The event includes lots of drinking and is marked by the Piping of the Haggis which occurs while a poet reads Burns’ masterwork “Adress to the Haggis.”


Costumes are, of course, encouraged. Guests are invited to dress like their favorite Scotsmen or don Sparklehorse’s sequined, rainbow unicorn themed garb.


The festivities kick off at 3p.m. and run through 7p.m. The event will be followed by karaoke; performances of Simple Minds and the Proclaimers are encouraged.
